for the cake i used this recipe with i changes by adding 1 1/2 cups of milk in stead of the 1 cup.
it is super good and fluffy and moist. i am very happy with the recipe.
for the fondant i've always used this recipe. i have never had a problem with it until the red color. i usually substitute corn syrup of the glucose and put 3 tablespoons of water in instead of 1/4 cup.
here is the recipe i had come up with that is my favorite for icing.
1/2 cup vegetable shortening
1/2 cup butter
4 tablespoons milk
4 cups icing sugar
1 tablespoon meringue powder
a pinch salt
1 teaspoon vanilla
1 large spoon full of vanilla betty crocker icing
cream shortening, butter, vanilla and milk together. add dry ingredients and mix it well. add a spoonful of betty crocker icing and mix it for another minute until nice and creamy. if you don't have meringue powder, you may leave it out. it is to make your icing creamier and have a better texture.
i find that betty crocker icing has a yummy flavor that you can't get anywhere else. i think a small amount of it gives a homemade icing a great homemade but different taste.
candace- if you would like to use it for piping flowers just don't put as much milk in. (like start with only half the amount.)
