chicken lettuce wraps

i love lettuce wraps. they are easy and fast to make, and they taste delisious. for some weird reason they are also something that both of my children will actually eat! rare. i can count on 2 hands the foods that scarlett will eat and somehow these are on that list.
this recipe is so flavourful that it always leaves me wanting more, and more, and more.

chicken lettuce wraps
2 tbsp oil
1 lb lean ground chicken
¼ cup thinly sliced green onion
1 tbsp grated fresh ginger
2 garlic cloves, crushed
¼ tsp red pepper flakes
¼ cup hoisin sauce
2 tbsp soy sauce
2 tsp sesame oil
1 can sliced water chestnuts, roughly chopped
1/4 cup finely chopped cilantro
iceburg lettuce leaves
to prepare filling, heat oil in frying pan. add ground chicken and cook, stirring to break it up, unitl browned.  add green onion, ginger, garlic and red pepper flakes; sauté for 2 minutes. add rest of ingredients. serve in iceburg lettuce leaves.. i like to serve these with rice.
